Restaurant Lighting: Bright Enough to Read, Dim Enough to Stay

Restaurant lighting is judged by the guest in three separate moments: reading the menu, seeing the food, and looking at the person across the table. A single overhead level cannot satisfy all three, which is why the good rooms are lit in layers.

The three moments and their levels

Menu reading wants roughly 150 to 300 lux on the paper, food wants light with a high colour rendering index from above and slightly in front, and conversation wants the general level low enough that nobody feels exposed.

Low pendants and table lamps do the work

Bringing the source close to the table raises illuminance where it is wanted and lowers it everywhere else. This is the entire argument for pendants hung just above head height and for small table lamps on dining tables: the levels separate naturally by distance rather than by more circuits.

Colour rendering is not optional here

Food is judged by appearance first. A warm source with a colour rendering index in the nineties makes plates look appetising, and an index in the low eighties makes the same dish look tired. Saturated red rendering matters particularly for meat and sauces.

Dimmers and the evening curve

A dining room that opens at five and closes at eleven needs a curve, not a setting. Start at a working level for early guests and staff set-up, drop in steps through the evening, then bring up a service level for cleaning. Stepped dimming is entirely acceptable for this, which makes cheaper controls viable.

Failures that show up in operations

Lamps on the tables get moved, knocked and used as coat hooks. Cordless designs remove the trip hazard and the daisy-chained extension lead, but they must hold enough charge for a full service and be collected for charging as part of the opening routine.
